Switch a product between simple and variable, build the variation matrix from attributes and terms, set inventory with stock, stock status, and sold-individually, add physical shipping with weight and dimensions and a shipping class, flag virtual and downloadable, add upsells, cross-sells, and purchase notes, and fill a per-product SEO tab and review toggles. Stock decrements automatically as orders come in and is held at checkout, so you do not oversell the last unit.
